What makes the Sfusato Amalfitano really special for lemon desserts is its pith, the thick white layer beneath the peel. Unlike in other lemons, it’s not bitter at all, and means bakers can use the entire fruit for a richer lemon essence that’s impossible to replicate. Let’s call it ‘sustainable baking’.

This incredible fruit is so intertwined with the region’s identity that it’s officially protected. It holds an IGP (Protected Geographical Indication) status, meaning that only the lemons grown on the sunny, terraced groves of the Amalfi Coast can bear the prestigious and respected Sfusato name.

Of all the ways to enjoy Amalfi's signature fruit, none is more iconic than the Delizia al limone, or “Lemon Delight”. These famous cream-filled creations are a true must-try for any visitor, with or without a sweet tooth!

The Delizia is not a dense, heavy dessert, but is an airy, cloud-like delight. Cutting into it reveals a masterful, multi-layered structure. At its heart lies a tiny sponge cake, so light, you don’t even realise the Delizia are in there.

The delicate sponge is soaked in a sweet Limoncello syrup, a crucial step that makes the cake moist and infuses every bite with the fragrant, zesty kick of Italy's most famous lemon liqueur. Finally, the entire dessert is enveloped in a smooth lemon cream that brings all the elements together. Each spoonful is a harmonious blend of soft cake, sweet syrup, and delicate cream. This makes the Delizia al Limone a dessert not only filled with lemony cream, but also filled with contradiction; somehow both rich yet incredibly light, sour yet with a sweetness. Its unique character in fact comes from the ingredient it’s missing: flour. The cake is instead built on a base of finely ground almonds, which gives it the right amount of moisture, as well as a subtle nutty flavour. This almond flour is blended with white chocolate, eggs, and a generous amount of fresh Amalfi lemon zest, creating a rich batter before it even enters the oven. 

The result is a cake with a tender crumb that almost melts in your mouth. Because it’s made without any wheat, the Torta Caprese al Limone also happens to be a fantastic and naturally gluten-free dessert. It’s a perfect example of how simple, high-quality ingredients can create an unforgettable moment, allowing your senses to create a lasting memory.

Il Dolce d’Amalfi (Home-Style Lemon Ring Cake)

Often baked in a simple ring shape (called ciambella), Dolce d’Amalfi is the kind of everyday sweet you’d expect from a home kitchen: no cream, no fuss, just soft cake and lemon.
